The Food Safety and Standards Authority of India (FSSAI) has directed food business operators to ensure that perishable food products are stored and transported under appropriate temperature conditions throughout the supply chain to protect public health.

In an advisory issued on Sunday, the food safety regulator highlighted concerns over the improper handling, storage and transportation of perishable commodities such as khoa, paneer, meat and fish. It warned that these products are highly susceptible to microbial growth and spoilage if they are not maintained at suitable temperatures.

FSSAI emphasised that the Food Safety and Standards (Licensing and Registration of Food Businesses) Regulations, 2011, prescribe hygiene and sanitation requirements for food business operators (FBOs). These requirements mandate maintaining appropriate temperatures throughout the supply chain, from procurement and sourcing to final delivery to consumers.

The regulator also underlined that the handling and transportation of perishable food products must take place under controlled temperature conditions. Exposure to unsuitable temperatures can compromise food safety, increase the risk of spoilage and pose risks to public health.

FSSAI has further directed state Food and Drug Administrations (FDAs) to maintain strict vigilance and take appropriate action against businesses found violating the prescribed requirements.

The advisory reinforces the importance of effective cold-chain management, temperature-controlled storage and refrigerated transportation in ensuring the safety and quality of perishable food products.
